Lately I've been trying to come up with low-carb versions of favorite dishes for The Fiance, who is a rabid carnivore and doesn't eat a lot of carbohydrates. I, on the other hand, love pasta, pizza, and anything sweet or otherwise bad for me. Pita pizzas aren't new, and this isn't anything fancy, but it is a nice way to get the great "comfort food" taste of pizza without devouring too many carbs. Because I use Joseph's Flax, Oat Bran, and Whole Wheat pita bread, it also delivers a lot of fiber, protein, and Omega-3 fatty acids. As always, this is for two.
- 2 reduced-carb pitas
- 1 large chicken breast, grilled and sliced
- 1 link breakfast sausage, sliced
- 2 T. ranch dressing
- 1/4 cup colby-jack cheese
- 2 T. blue cheese, crumbled
- 1 t. butter
- 1/2 medium onion, finely sliced
Spread each pita with one tablespoon of ranch dressing (you could also use barbecue sauce). Sprinkle with colby-jack and blue cheese, reserving some cheese for the top. Add sausage.
Caramelize onions in butter until soft and brown. Spread over pitas.
Arrange chicken on pitas and sprinkle with remaining cheese. Broil for 3-5 minutes or until cheese is melted and pitas begin to turn brown at the edges.
